Sausage Egg & Cheese Breakfast Sammie

My boyfriend has been receiving pre-made breakfasts from a meal delivery service the past couple months.  When he told me he was canceling the service I wanted to whip up a quick breakfast for him that I could make while he was getting ready for work and still be tasty and hearty enough to keep him full.  We had the sausage patties on hand from another recipe and we always have eggs in the house so this quickly popped into my head.  You could use the stove top and a pan to cook up the egg and heat the sausage, but the microwave cuts down on time and does the trick!  In fact I think the magic of this recipe is microwaving the egg in a bowl.  It ends up cooking the egg in a circle shape making it perfect to transfer to the sandwich.   

I threw in some chopped up kale as well, to make sure he's getting in some veggies!  I think pepper and onion or mushrooms would be great too.  And as usual, bacon is a great substitute for the sausage.  Or skip the meat all together and throw in an extra egg or egg white if you want.  Other ideas to try: add a bit of hot sauce, or some mashed up avocado to the muffin before assembly.  

 

Ingredients: 

  • 1 Ezekiel 7-Sprouted Grains English Muffin

  • 1 Chicken Sausage Breakfast Patty 

  • 1 Ounce Cabot Sharp Extra Light Cheese

  • 1 Egg

  • 10g (small handful) kale

Directions:

Tear or chop kale into small bite size pieces.

Whisk egg with salt and pepper in microwave safe bowl.

Add kale to egg and microwave for 1 minute or until egg cooks through.

Place cheese on top of sausage patty, microwave for 30 seconds or until sausage is warmed through and cheese is beginning to melt. 

Toast english muffin.

Assemble by placing egg round on half of muffin, then the sausage with cheese and top with second half of muffin. 

I wrapped it all up in foil so it could be thrown it in a bag and eaten on the go.  Super simple and great for those looking for an on-the-go breakfast solution!
