Peach Salsa

I think I finally caught the peach bug! It might be a tad too late but I’m running with it anyway. This recipe screams summer, and I think it’s the perfect way to hang on to the season just a little bit longer.

The recipe makes a big batch so be prepared to use this throughout the week. Great on grilled fish and chicken, to top off tacos or scooped up on chips.

I think the flavors get better as it sits so if you’re making it for a party feel free to make it a day ahead a store it covered in the fridge. Pairs well with fish tacos, cold beers and sunshine :-).


3 Peaches, cubed

1/2 Red onion, diced

1 Bell pepper, diced

1 jalapeño pepper, finely diced

1/2 cup black beans, drained & rinsed

Handful cilantro leaves, chopped

Lime zest from 1 lime

Lime Juice from 2 limes


Combine all ingredients in large bowl & toss to combine

Enjoy immediately or store in air tight container for later.
